Food business must produce and commercialize safe food. For that purpose the regulation (CE)  852/2004 of the European Union consider the need that food business implant a system of auto control based on the principles for hazard analysis and critical control points ( HACCP).

HACCP is a system that helps food business operators look at how they handle food, and introduces procedures to make sure the food produced is safe to eat.
